Interesting Facts
The wine is made from grapes from Swartland sites near Malmesbury, Upper Blaauklippen and Polkadraai, as well as several old sites from Paardeberg. The grapes are picked early in the morning, sorted in the vineyard and pressed in whole bunches. The juice undergoes spontaneous fermentation, which lasts about two months. The wine is aged on the lees for about 18 months before bottling.
