On the palate the wine is crisp and refreshing, with smooth tannins. Long and flavorful finish.
Aroma:
On the nose it shows marasca cherry, red berries, peony flower and red rose, alternating on hints of cinnamon and cloves.

Roasted rabbit with olives, cacciucco alla livornese.
Interesting Facts
The wine is made 85% from Sangiovese grapes, with the addition of 15% varieties such as Alicante and Ciliegiolo. The first vintage of this wine dates back to 1985, and since then it has become an inseparable part of the Fattoria Le Pupille estate. The harvest usually takes place at the beginning of September for Ciliegiolo, at the end of the month for Sangiovese and in the second half of September for Alicante. Vinification takes place in steel tanks at a controlled temperature (maximum 24 °C). Maceration lasts up to 15 days. Malolactic fermentation also takes place in steel. Wine aging takes about 6 months.
