Interesting Facts
The Cellore zone is known for its unique characteristics. It is here that some of the best examples of the varieties used in the production of Valpolicella wines grow. The grapes are harvested exclusively by hand and placed in plastic boxes (called plotó), in which the berries wither for 40 days. After the grapes are pressed and the must with the skin is sent to stainless steel vats, where fermentation takes place. Next, the wine is aged 24 months in American oak barriques, after which it spends 6 months in the bottle.
